Bhajani chakali is a traditional Maharashtrian snack made from a flour blend known as “bhajani.” Bhajani typically consists of various grains and lentils like rice, chana dal (split chickpeas), urad dal (black gram lentils), and sometimes, moong dal (split mung beans). These ingredients are dry roasted and ground into a fine flour. To make bhajani chakali, this flour is mixed with spices like red chili powder, turmeric, sesame seeds, and sometimes even ajwain (carom seeds). The dough is then prepared by combining the bhajani flour with water and sometimes a bit of butter or oil. The dough is then shaped into spirals or other intricate patterns using a chakli maker or a piping bag, and then deep-fried until golden brown and crispy.
