Champakali Gathiya

Champakali gathiya is a traditional Gujarati snack made from chickpea flour (besan), seasoned with spices like ajwain (carom seeds), turmeric, and salt. The dough is rolled out into thin sheets and then cut into diamond or leaf shapes resembling the petals of a flower, hence the name “Champakali,” which means “champa flower.” These shapes are then deep-fried until golden brown and crispy. Champakali gathiya is enjoyed as a crunchy snack on its own or paired with chutneys and tea.
